Strawberry Lemonade

This strawberry lemonade is a sweet and tangy summer cooler that blends ripe strawberries with freshly squeezed lemon juice for a naturally pink, thirst-quenching drink. It is bright, balanced, and far better than any store bought version, with real fruit flavor in every sip. Serve it ice cold in a pitcher for the whole family on a hot day.

Ingredients

  • 300 g strawberries
  • 150 ml lemon juice
  • 100 g sugar
  • 700 ml cold water

Instructions

  1. Hull and halve about 400g of fresh strawberries, then combine them in a saucepan with 150g of sugar and 120ml of water.
  2. Bring the mixture to a gentle simmer over medium heat and cook for about 5 to 7 minutes, stirring occasionally, until the berries soften and release their juices and the sugar fully dissolves.
  3. Remove from the heat and let the syrup cool slightly, then blend it until smooth and strain it through a fine mesh sieve to remove the seeds for a cleaner texture.
  4. Squeeze enough fresh lemons to get about 240ml of juice, removing any seeds.
  5. In a large pitcher, combine the strawberry syrup, the lemon juice, and about 700ml of cold water, then stir well to blend.
  6. Taste and adjust, adding more water if it is too strong or a touch more sugar if it is too tart, then refrigerate until cold.
  7. Serve over plenty of ice and garnish each glass with a lemon slice or a whole strawberry.

💡 Chef's tip

Make a quick strawberry syrup by simmering the berries with the sugar first, because dissolving the sugar into a hot syrup blends far more smoothly into cold lemonade than dry sugar, which tends to sink and stay gritty.

Blending the strawberries into the lemon base, then straining, gives a vivid color and real fruit flavor that syrups and powders never match.
