Strawberry Lemonade

Ingredients
- 300 g strawberries
- 150 ml lemon juice
- 100 g sugar
- 700 ml cold water

Instructions
- Hull and halve about 400g of fresh strawberries, then combine them in a saucepan with 150g of sugar and 120ml of water.
- Bring the mixture to a gentle simmer over medium heat and cook for about 5 to 7 minutes, stirring occasionally, until the berries soften and release their juices and the sugar fully dissolves.
- Remove from the heat and let the syrup cool slightly, then blend it until smooth and strain it through a fine mesh sieve to remove the seeds for a cleaner texture.
- Squeeze enough fresh lemons to get about 240ml of juice, removing any seeds.
- In a large pitcher, combine the strawberry syrup, the lemon juice, and about 700ml of cold water, then stir well to blend.
- Taste and adjust, adding more water if it is too strong or a touch more sugar if it is too tart, then refrigerate until cold.
- Serve over plenty of ice and garnish each glass with a lemon slice or a whole strawberry.
💡 Chef's tip
Make a quick strawberry syrup by simmering the berries with the sugar first, because dissolving the sugar into a hot syrup blends far more smoothly into cold lemonade than dry sugar, which tends to sink and stay gritty.
Blending the strawberries into the lemon base, then straining, gives a vivid color and real fruit flavor that syrups and powders never match.
