Ingredients
- 600 g mixed seasonal fruit
- 1 lime
- 1 tbsp honey
- a few leaves mint
Instructions
- Chop the firmer fruit into bite-size pieces.
- Whisk lime juice with honey.
- Toss the fruit gently with the dressing.
- Add berries and mint last and serve cold.
💡 Chef's tip
Add soft fruits like berries and banana last and toss gently so they do not bruise into mush.
A small squeeze of lime and drizzle of honey draws out the fruits' juices into a light natural syrup and stops cut apples and bananas from browning.
