Ingredients
- 600 g mixed seasonal fruit
- 1 lime
- 1 tbsp honey
- a few leaves mint
Instructions
- Wash and dry all the fruit thoroughly, then chop a mix such as strawberries, grapes, melon, pineapple, apple, and kiwi into bite sized pieces of roughly the same size so every spoonful has variety.
- In a small bowl, whisk together the juice of one orange, the juice of half a lemon, and 1 tablespoon of honey until the honey dissolves into a light dressing.
- Add the firmer and quick browning fruits like apple and banana to a large bowl first and pour a little of the citrus dressing over them, tossing to coat and protect them from turning brown.
- Add the remaining softer fruits and berries, then drizzle the rest of the dressing over the top.
- Gently fold everything together with a large spoon, using a light hand so the delicate berries do not get crushed or mushy.
- Cover and chill the salad in the refrigerator for at least 30 minutes before serving, which lets the flavors mingle and serves it pleasantly cold, then garnish with a few torn mint leaves if you like.
💡 Chef's tip
Toss the cut apples, pears, and bananas with a little of the citrus juice right away, because the acid prevents the cut surfaces from browning and keeps the salad looking vibrant for hours.
A small squeeze of lime and drizzle of honey draws out the fruits' juices into a light natural syrup and stops cut apples and bananas from browning.
