This fresh fruit salad is a bright, refreshing medley of seasonal fruits tossed in a light honey and citrus dressing that wakes up every bite. Ingredients

  • 600 g mixed seasonal fruit
  • 1 lime
  • 1 tbsp honey
  • a few leaves mint

Instructions

  1. Wash and dry all the fruit thoroughly, then chop a mix such as strawberries, grapes, melon, pineapple, apple, and kiwi into bite sized pieces of roughly the same size so every spoonful has variety.
  2. In a small bowl, whisk together the juice of one orange, the juice of half a lemon, and 1 tablespoon of honey until the honey dissolves into a light dressing.
  3. Add the firmer and quick browning fruits like apple and banana to a large bowl first and pour a little of the citrus dressing over them, tossing to coat and protect them from turning brown.
  4. Add the remaining softer fruits and berries, then drizzle the rest of the dressing over the top.
  5. Gently fold everything together with a large spoon, using a light hand so the delicate berries do not get crushed or mushy.
  6. Cover and chill the salad in the refrigerator for at least 30 minutes before serving, which lets the flavors mingle and serves it pleasantly cold, then garnish with a few torn mint leaves if you like.

Toss the cut apples, pears, and bananas with a little of the citrus juice right away, because the acid prevents the cut surfaces from browning and keeps the salad looking vibrant for hours.
