- Drain and rinse two 15 ounce cans of chickpeas, reserving a few tablespoons of the liquid from the can in case you need to loosen the hummus later.
- Add 1 quarter cup of fresh lemon juice and 1 third cup of tahini to the food processor and blend for about 60 seconds until the mixture is pale, thick, and creamy.
- Add 2 cloves of garlic, half a teaspoon of ground cumin, and three quarters of a teaspoon of salt, then blend again for 30 seconds to combine.
- With the processor running, drizzle in 2 tablespoons of olive oil through the feed tube so it emulsifies smoothly into the base.
- Add the rinsed chickpeas and blend for 2 to 3 full minutes, stopping to scrape down the sides, until the hummus is completely smooth with no graininess.
- If the texture is too thick, add the reserved chickpea liquid or a little ice water one tablespoon at a time and blend until it reaches a soft, spoonable consistency.
- Taste and adjust the salt and lemon, then transfer to a bowl, swirl the top, and finish with a drizzle of olive oil and a sprinkle of paprika before serving.
