Ingredients
- 1 can canned chickpeas
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1 clove garlic
- 2 tbsp olive oil
Instructions
- Blend tahini and lemon juice until pale and fluffy.
- Add chickpeas, garlic and a little of their liquid.
- Blend until silky, loosening with more liquid as needed.
- Drizzle with olive oil and serve.
💡 Chef's tip
Add the chickpea liquid (aquafaba) a spoon at a time while blending to reach a cloud-soft texture.
Blending the tahini and lemon juice together first, before adding the chickpeas, emulsifies them into a fluffy base that makes the whole dip lighter and smoother.
