Balsamic Vinaigrette

Balsamic Vinaigrette

Balsamic vinaigrette is a bright, tangy-sweet dressing that elevates any salad in seconds. With a perfect balance of balsamic vinegar, olive oil, and a touch of honey, it beats any bottled version. Keep a jar in the fridge to dress greens, roasted vegetables, or grain bowls all week.

Ingredients

  • 1/4 cup balsamic vinegar
  • 3/4 cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions

  1. Add the balsamic vinegar, mustard, honey, and garlic to a jar.
  2. Season with salt and pepper.
  3. Pour in the olive oil.
  4. Seal the jar and shake vigorously until emulsified.
  5. Taste and adjust the balance of oil, vinegar, or honey.
  6. Store in the fridge and shake again before each use.

💡 Chef's tip

Shake or whisk hard right before serving; vinaigrettes naturally separate, and re-emulsifying gives the silkiest coating.

The classic three-to-one ratio of oil to vinegar is what gives a balanced vinaigrette, smooth and rich rather than sharp, and a little mustard helps it emulsify.
