Ingredients

  • 5 cups frozen watermelon cubes
  • 1 lime, juiced
  • 1/2 cup cold water or coconut water
  • optional honey

Instructions

  1. Freeze the watermelon cubes until solid, ideally overnight.
  2. Add the frozen watermelon, lime juice, and water to a blender.
  3. Blend until thick and slushy, scraping down as needed.
  4. Add a touch more water if it is too thick to blend.
  5. Taste and add honey only if the watermelon is not sweet enough.
  6. Pour into glasses, garnish with mint, and serve immediately.
