Fudgy Brownies

These fudgy brownies are dense, rich, and intensely chocolatey with a signature crackly top. A high ratio of chocolate and butter to flour gives them that gooey, melt-in-your-mouth center bakeries are known for. They come together in one bowl with no mixer required.

Ingredients

  • 200 g dark chocolate
  • 150 g butter
  • 1 cup sugar
  • 3 eggs
  • 3/4 cup flour
  • 2 tbsp cocoa powder
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 175C (350F) and line a square pan with parchment.
  2. Melt the chocolate and butter together until smooth, then let cool slightly.
  3. Whisk in the sugar and eggs vigorously until glossy and thick.
  4. Fold in the flour, cocoa, and salt until just combined.
  5. Spread the batter in the pan and bake for 25 to 30 minutes until the center is just set.
  6. Cool completely before cutting into squares.

Pull the brownies while the center still looks slightly underbaked; they firm up as they cool and stay fudgy instead of turning cakey.
