Fudgy Brownies
These fudgy brownies are dense, rich, and intensely chocolatey with a signature crackly top. A high ratio of chocolate and butter to flour gives them that gooey, melt-in-your-mouth center bakeries are known for. They come together in one bowl with no mixer required.

Ingredients
- 200 g dark chocolate
- 150 g butter
- 1 cup sugar
- 3 eggs
- 3/4 cup flour
- 2 tbsp cocoa powder
- 1/2 tsp salt
Instructions
- Preheat the oven to 175C (350F) and line a square pan with parchment.
- Melt the chocolate and butter together until smooth, then let cool slightly.
- Whisk in the sugar and eggs vigorously until glossy and thick.
- Fold in the flour, cocoa, and salt until just combined.
- Spread the batter in the pan and bake for 25 to 30 minutes until the center is just set.
- Cool completely before cutting into squares.
💡 Chef's tip
Pull the brownies while the center still looks slightly underbaked; they firm up as they cool and stay fudgy instead of turning cakey.
Whisking the sugar into the melted chocolate and eggs vigorously is what creates the shiny, paper-thin crackly top that defines a great brownie.
