Ingredients

  • 1 cup pumpkin puree
  • 2.5 cups flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 175C (350F) and line baking sheets.
  2. Cream the butter and sugar, then beat in the pumpkin and egg.
  3. Mix in the flour, baking soda, spices, and salt.
  4. Drop rounded spoonfuls onto the sheets and flatten slightly.
  5. Bake for 12 to 14 minutes until set.
  6. Cool, then drizzle with a simple cinnamon glaze.

These cookies do not spread much, so flatten the dough mounds slightly before baking for an even shape.

Pumpkin makes these cookies soft and cake-like rather than chewy, so blotting excess moisture from the puree keeps them from turning gummy.
