Ingredients
- 1.5 cups pumpkin puree
- 1.75 cups flour
- 1.5 cups sugar
- 2 eggs
- 1/2 cup vegetable oil
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 1 tsp cinnamon
Instructions
- Preheat the oven to 175C (350F) and grease a loaf pan.
- Whisk the pumpkin, sugar, eggs, and oil until smooth.
- In another bowl, combine the flour, baking soda, spices, and salt.
- Fold the dry ingredients into the wet until just combined.
- Pour into the loaf pan and smooth the top.
- Bake for 55 to 65 minutes until a toothpick comes out clean, then cool before slicing.
