Ingredients

  • 1.5 cups apple cider
  • 2 cups flour
  • 3/4 cup sugar
  • 2 eggs
  • 1/3 cup butter, melted
  • 2 tsp baking powder
  • 2 tsp cinnamon

Instructions

  1. Simmer the apple cider until reduced to about 1/2 cup, then cool.
  2. Preheat the oven to 190C (375F) and grease a donut pan.
  3. Whisk the reduced cider, sugar, eggs, and melted butter.
  4. Fold in the flour, baking powder, cinnamon, and salt.
  5. Pipe the batter into the donut pan and bake for 10 to 12 minutes.
  6. Toss the warm donuts in cinnamon sugar and serve.

Reducing the apple cider to a concentrated syrup before adding it to the batter intensifies the apple flavor that would otherwise be too subtle.
