Apple Pie

Classic apple pie is the ultimate comfort dessert: tender, cinnamon-spiced apples tucked under a flaky, golden double crust. The filling cooks down into a sweet, jammy interior while the crust bakes up buttery and crisp. Serve it warm with a scoop of vanilla ice cream.

Ingredients

  • 1 double pie crust
  • 6 large apples, sliced
  • 3/4 cup sugar
  • 1.5 tsp cinnamon
  • 2 tbsp flour
  • 1 tbsp lemon juice
  • 2 tbsp butter

Instructions

  1. Preheat the oven to 200C (400F) and line a pie dish with the bottom crust.
  2. Toss the sliced apples with the sugar, cinnamon, flour, and lemon juice.
  3. Pile the apples into the crust and dot with the butter.
  4. Cover with the top crust, seal and crimp the edges, and cut vents in the top.
  5. Bake for 20 minutes, then lower to 175C (350F) and bake 35 to 40 minutes more until golden and bubbling.
  6. Cool at least 2 hours so the filling sets, then serve.

Use a mix of tart and sweet apples like Granny Smith and Honeycrisp; the blend gives the best balance of flavor and a filling that holds its shape.

Tossing the apples with a little flour or cornstarch thickens the juices as they bake, preventing the dreaded soggy bottom and runny filling.
