- 500 g ground beef
- 1 can black beans
- 1 cup corn
- 1 can diced tomatoes
- 1 onion, diced
- 3 cups beef broth
- 2 tbsp taco seasoning
- to serve toppings: cheese, chips
Instructions
- Brown the ground beef with the onion in a pot, then drain the fat.
- Stir in the taco seasoning and cook for 1 minute.
- Add the black beans, corn, tomatoes, and broth.
- Bring to a boil, then simmer for 15 to 20 minutes.
- Season to taste with salt and pepper.
- Serve topped with cheese, sour cream, and crushed tortilla chips.
💡 Chef's tip
Let it simmer at least 15 minutes; the extra time deepens the flavor and thickens the soup as the starches release.
Simmering everything in one pot lets the spices, beans, and tomatoes meld into a rich, well-rounded broth far greater than the quick cook time suggests.
