Taco Soup

Taco soup is a hearty, one-pot meal with all the bold flavors of tacos in a warm, comforting bowl. Loaded with beef, beans, corn, and tomatoes, it comes together in about 35 minutes. Top it with cheese, sour cream, and crushed tortilla chips for a fun, family-friendly dinner.

Ingredients

  • 500 g ground beef
  • 1 can black beans
  • 1 cup corn
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cups beef broth
  • 2 tbsp taco seasoning

Instructions

  1. Brown the ground beef with the onion in a pot, then drain the fat.
  2. Stir in the taco seasoning and cook for 1 minute.
  3. Add the black beans, corn, tomatoes, and broth.
  4. Bring to a boil, then simmer for 15 to 20 minutes.
  5. Season to taste with salt and pepper.
  6. Serve topped with cheese, sour cream, and crushed tortilla chips.

Let it simmer at least 15 minutes; the extra time deepens the flavor and thickens the soup as the starches release.
