White Chicken Chili

White chicken chili is a creamy, comforting twist on classic chili, made with tender chicken, white beans, and green chiles. It is mildly spicy, rich, and loaded with flavor in every spoonful. Top it with cheese, lime, and cilantro for a crowd-pleasing dinner.

Ingredients

  • 600 g chicken breast
  • 2 cans white beans
  • 1 can green chiles, diced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1.5 tsp cumin
  • 3 cloves garlic
  • 1/2 cup sour cream

Instructions

  1. Saute the onion and garlic in a pot until soft.
  2. Add the chicken, beans, green chiles, cumin, and broth.
  3. Simmer for 20 minutes until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Mash some of the beans against the side of the pot to thicken the chili.
  6. Stir in the sour cream off the heat, season, and serve with toppings.

Stir in a little sour cream or cream cheese at the end off the heat for extra richness without curdling.

Blending or mashing some of the white beans into the broth is what thickens the chili to a creamy consistency without needing heavy cream.
