Chicken Wild Rice Soup

Ingredients

  • 500 g chicken breast
  • 1 cup wild rice blend
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 3 tbsp flour

Instructions

  1. Saute the onion, carrots, and celery in butter until soft.
  2. Stir in the flour and cook for 1 minute.
  3. Add the wild rice, chicken, and broth and simmer for 35 minutes until the rice is tender.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Stir in the cream off the heat.
  6. Season with salt and pepper and serve warm.
