A chicken burrito bowl layers seasoned chicken, cilantro-lime rice, beans, corn, and fresh toppings into one satisfying meal. It is endlessly customizable, meal-prep friendly, and packed with bold Tex-Mex flavor. Build it your way with your favorite salsa, avocado, and a squeeze of lime.

Ingredients

  • 600 g chicken breast, cubed
  • 3 cups cooked rice
  • 1 can black beans, drained
  • 1 cup corn
  • 2 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1 tbsp each chili powder and cumin
  • to serve toppings: salsa, avocado

Instructions

  1. Toss the chicken with the chili powder, cumin, half the lime juice, salt, and pepper.
  2. Cook the chicken in a hot oiled pan until browned and cooked through.
  3. Stir the remaining lime juice and the cilantro into the warm rice.
  4. Warm the black beans and corn with a pinch of salt.
  5. Divide the cilantro-lime rice among bowls and top with chicken, beans, and corn.
  6. Finish with salsa, avocado, and a squeeze of lime, then serve.

💡 Chef's tip

Marinate the chicken even briefly in lime and spices; the acid and seasoning penetrate fast and make a big difference in flavor.

Tossing the cooked rice with lime juice and cilantro turns plain rice into the bright, restaurant-style base that ties the whole bowl together.
