Spanish Chorizo and Potatoes

Spanish chorizo and potatoes is a rustic, deeply savory dish where smoky sausage flavors tender potatoes in one pan. The chorizo releases its paprika-rich oil, which coats every golden potato chunk. It works as a hearty tapa, a side, or a satisfying main with a fried egg on top.

Ingredients

  • 250 g Spanish chorizo, sliced
  • 600 g potatoes, cubed
  • 1 onion, sliced
  • 1 tsp smoked paprika
  • 3 cloves garlic
  • 2 tbsp olive oil
  • to garnish parsley

Instructions

  1. Heat the olive oil and cook the chorizo until it releases its red oil, then set aside.
  2. Add the potato cubes to the same pan and fry until golden and nearly tender.
  3. Add the onion and garlic and cook until soft.
  4. Stir in the smoked paprika and return the chorizo to the pan.
  5. Cook a few minutes more until the potatoes are fully tender and crisp at the edges.
  6. Garnish with parsley and serve hot, with a fried egg on top if you like.

💡 Chef's tip

Cut the potatoes small and even so they cook through and crisp in the same time it takes the chorizo to render.

Cooking the chorizo first and then frying the potatoes in its rendered red oil is what gives the dish its signature smoky color and flavor in every bite.
