Cornbread

Cornbread

Cornbread is a golden, tender quick bread with a lightly sweet flavor and moist crumb. It bakes up with crisp edges and a soft center, perfect alongside chili, soup, or barbecue. This easy one-bowl recipe is a Southern comfort classic.

Ingredients

  • 1.5 cups cornmeal
  • 1 cup flour
  • 1 cup milk
  • 2 eggs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 1 tbsp baking powder

Instructions

  1. Preheat the oven to 200C (400F) and grease a skillet or baking pan.
  2. Whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, and melted butter.
  4. Combine the wet and dry ingredients, stirring just until mixed.
  5. Pour into the hot skillet.
  6. Bake for 20 to 25 minutes until golden and a toothpick comes out clean, then serve warm.

💡 Chef's tip

Do not overmix the batter; stir just until combined so the cornbread stays tender rather than dense and tough.

Baking the batter in a preheated skillet gives cornbread its signature crackly, golden crust while keeping the inside moist and tender.
