Ingredients
- 1.2 kg sweet potatoes
- 1/2 cup butter
- 1/2 cup brown sugar
- 2 eggs
- 1 cup pecans, chopped
- 1/2 cup flour
- 1 tsp cinnamon
Instructions
- Bake the sweet potatoes until soft, then scoop out and mash the flesh.
- Mix the mash with half the butter, half the brown sugar, the eggs, and cinnamon.
- Spread the mixture into a baking dish.
- Combine the pecans, flour, and the remaining butter and brown sugar into a streusel.
- Sprinkle the streusel evenly over the top.
- Bake at 175C (350F) for 30 minutes until golden and bubbling, then serve.
