Scalloped potatoes are thin-sliced potatoes baked in a rich, creamy garlic sauce until tender and golden. Layer upon layer of soft potato and velvety cream make this the ultimate comfort side. It is a showstopping dish for holidays and Sunday dinners.

Ingredients
- 1.2 kg potatoes, thinly sliced
- 3 tbsp butter
- 3 tbsp flour
- 2 cups milk
- 3 cloves garlic
- 1.5 cups shredded cheese
- 1 onion, thinly sliced
Instructions
- Melt the butter, saute the garlic, then whisk in the flour and cook 1 minute.
- Slowly whisk in the milk and simmer until thickened, then season.
- Layer half the potatoes and onion in a greased baking dish.
- Pour over half the sauce and half the cheese, then repeat the layers.
- Cover and bake at 190C (375F) for 40 minutes.
- Uncover and bake 25 to 30 minutes more until golden and the potatoes are tender.
💡 Chef's tip
Cover the dish for the first half of baking so the potatoes soften, then uncover to brown the top into a golden crust.
Slicing the potatoes thin and evenly, ideally with a mandoline, is what lets them cook through and soak up the cream uniformly for that melting texture.
