Ingredients
- 4 cups broccoli florets
- 3 cups cooked rice
- 3 tbsp butter
- 3 tbsp flour
- 2 cups milk
- 2 cups shredded cheddar
- 1/2 onion, diced
- 2 cloves garlic
Instructions
- Blanch the broccoli for 3 minutes, then drain.
- Melt the butter, saute the onion and garlic, then whisk in the flour.
- Slowly add the milk and simmer until thickened, then stir in most of the cheese.
- Fold in the cooked rice and broccoli.
- Transfer to a baking dish and top with the remaining cheese.
- Bake at 190C (375F) for 20 to 25 minutes until bubbly and golden, then serve.
💡 Chef's tip
Blanch the broccoli briefly first so it stays bright green and tender-crisp rather than overcooking in the bake.
Stirring most of the cheese into the sauce and saving some for the top gives both a creamy interior and a golden, bubbly cheese crust.
