Ingredients
- 4 sweet potatoes
- 1 can black beans, drained
- 1 cup corn
- 1/2 red onion, diced
- 1 lime, juiced
- 1 tsp cumin

Instructions
- Preheat the oven to 200C (400F) and pierce the sweet potatoes all over.
- Roast them directly on the rack for 40 to 45 minutes until completely soft.
- Warm the black beans and corn with the cumin, red onion, salt, and pepper.
- Split the roasted sweet potatoes open and fluff the insides with a fork.
- Pile in the bean and corn mixture.
- Drizzle with a lime-avocado or tahini sauce and serve.
