Classic Beef Burger

A juicy homemade beef burger with a seared crust and all your favorite toppings beats any drive-through. The secret is good fatty mince, a hot pan, and a light hand when shaping. Pile it high on a toasted bun and serve with fries.

Ingredients

  • 600 g ground beef (20% fat)
  • 4 burger buns
  • 4 cheese slices
  • to serve lettuce and tomato
  • to taste salt and pepper

Instructions

  1. Gently form the beef into 4 loose patties slightly wider than the buns, pressing a dimple in the center of each.
  2. Season both sides generously with salt and pepper right before cooking.
  3. Heat a pan or grill until very hot, then cook the patties 3 to 4 minutes without moving them to build a seared crust.
  4. Flip once, add a cheese slice, and cook 2 to 3 minutes more to your liking.
  5. Toast the cut buns in the pan for 30 seconds until lightly golden.
  6. Let the patties rest 2 minutes so the juices settle.
  7. Build each burger with lettuce, tomato, the patty, and your favorite sauces.

💡 Chef's tip

Press a small dimple into the center of each patty before cooking so it stays flat instead of puffing into a dome.

Use ground beef with around twenty percent fat and handle it as little as possible, since overworking the meat makes a dense, tough patty.
