Mongolian Beef

Mongolian beef is tender strips of beef in a rich, savory-sweet soy and ginger sauce with green onions. Fast, saucy, and packed with flavor, it is a restaurant classic you can make in 30 minutes. Serve it over steamed rice to soak up the glossy sauce.

Ingredients

  • 600 g flank steak, sliced thin
  • 1/4 cup cornstarch
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1 tbsp ginger, minced
  • 4 cloves garlic, minced
  • 5 green onions
  • 1/2 cup water

Instructions

  1. Toss the sliced beef in cornstarch to coat.
  2. Sear the beef in batches in hot oil until browned, then set aside.
  3. Saute the garlic and ginger briefly in the same pan.
  4. Add the soy sauce, brown sugar, and water and simmer until thickened.
  5. Return the beef and toss to coat in the sauce.
  6. Stir in the green onions and serve over rice.

Sear the beef in batches over high heat so it browns quickly instead of steaming and turning gray.

Coating the beef in cornstarch before searing gives it a velvety texture and helps the sauce cling and thicken into a glossy glaze.
