Biscuits and Gravy

Biscuits and Gravy

Biscuits and gravy is the ultimate Southern comfort breakfast: fluffy biscuits smothered in a creamy, peppery sausage gravy. The rich, savory gravy clings to every tender bite. It is hearty, filling, and surprisingly quick to make from scratch.

Ingredients

  • 8 biscuits
  • 450 g breakfast sausage
  • 1/3 cup flour
  • 3 cups milk
  • 1 tsp black pepper
  • to taste salt

Instructions

  1. Bake or warm the biscuits and keep them ready.
  2. Brown the sausage in a skillet, breaking it into crumbles, until cooked through.
  3. Sprinkle the flour over the sausage and cook, stirring, for 1 minute.
  4. Slowly whisk in the milk and bring to a simmer.
  5. Cook until the gravy thickens, then season generously with black pepper and salt.
  6. Split the biscuits and ladle the hot gravy over the top.

💡 Chef's tip

Season the gravy with far more black pepper than feels right; a generous, peppery bite is what defines a proper sausage gravy.

Cooking the flour in the sausage drippings for a minute before adding milk forms a roux, which is what thickens the gravy into a smooth, velvety sauce instead of a thin, floury one.
