Air Fryer Brownies

These air fryer brownies are deeply fudgy with crackly tops and gooey centers, ready in a fraction of the time it takes to heat a full oven. The air fryer circulates hot air for an even bake, giving you rich chocolate squares with minimal effort and easy cleanup. They are a perfect quick treat for the whole family, served warm with a scoop of ice cream.

Ingredients

  • 120 g dark chocolate
  • 80 g butter
  • 120 g sugar
  • 2 eggs
  • 80 g flour

Instructions

  1. Melt 115g of butter with 100g of chopped dark chocolate in a heatproof bowl, stirring until smooth and glossy, then let the mixture cool for a few minutes so it does not cook the eggs.
  2. Whisk 150g of sugar into the melted chocolate, then beat in 2 eggs and 1 teaspoon of vanilla extract until the batter looks thick and shiny, which gives brownies their signature crackly top.
  3. Sift in 65g of all purpose flour, 30g of cocoa powder, and a pinch of salt, then fold gently with a spatula just until no dry streaks remain, being careful not to overmix.
  4. Grease a small baking pan that fits your air fryer or line it with parchment paper, then pour in the batter and spread it into an even layer.
  5. Preheat the air fryer to 160C (320F) for about 3 minutes so it is hot when the brownies go in.
  6. Place the pan in the basket and air fry at 160C (320F) for 15 to 18 minutes, checking near the end, until the top is set and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the brownies cool in the pan for at least 15 minutes before lifting them out and cutting into squares, as cutting too early causes them to fall apart.

💡 Chef's tip

Line the air fryer basket or pan with parchment and underbake slightly, pulling the brownies when the center is still a little soft, because they continue to firm up as they cool and this keeps them fudgy rather than dry.

The air fryer's circulating heat sets the brownie edges fast while leaving the center fudgy, giving you that gooey middle in a fraction of the oven time.
