Classic Chocolate Chip Cookies

Soft in the middle, chewy at the edges, and dotted with melty chocolate, these are the chocolate chip cookies everyone wants. The recipe is simple but a couple of small techniques take them from good to bakery-level. Best enjoyed warm with a glass of milk.

Ingredients

  • 280 g flour
  • 170 g butter, softened
  • 200 g total brown and white sugar
  • 2 eggs
  • 200 g chocolate chips

Instructions

  1. Cream the softened butter with both sugars until light and fluffy.
  2. Beat in the eggs and a splash of vanilla.
  3. Mix in the flour, a teaspoon of baking soda, and a pinch of salt until just combined.
  4. Fold in the chocolate chips.
  5. Chill the dough at least 30 minutes.
  6. Scoop onto lined trays, spacing them well apart, and bake at 180C (350F) for 10 to 12 minutes until the edges are golden.
  7. Leave on the tray 5 minutes to finish setting, then cool on a rack.

💡 Chef's tip

Pull them from the oven when the centers still look slightly underbaked, as they continue to set on the hot tray for perfectly soft middles.

Chilling the dough for at least thirty minutes before baking deepens the flavor and stops the cookies spreading into thin, greasy disks.
