Tiramisu

Tiramisu is the classic Italian no-bake dessert of coffee-soaked ladyfingers layered with a cloud of sweet mascarpone cream. It is elegant, make-ahead, and absolutely irresistible. A dusting of cocoa over the top is the finishing flourish.

Ingredients

  • 24 ladyfingers
  • 400 g mascarpone
  • 3 eggs, separated
  • 300 ml strong coffee
  • to dust cocoa powder

Instructions

  1. Brew the coffee and let it cool, then pour into a shallow dish.
  2. Beat the egg yolks with sugar until pale, then fold in the mascarpone until smooth.
  3. Whip the egg whites to stiff peaks and gently fold them into the mascarpone cream.
  4. Dip each ladyfinger briefly in the coffee, just a second per side, and lay a layer in a dish.
  5. Spread half the cream over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and the rest of the cream.
  7. Cover and chill at least 6 hours or overnight.
  8. Dust generously with cocoa powder just before serving.

💡 Chef's tip

Make it a day ahead, as tiramisu needs at least six hours chilling for the layers to set and the flavors to come together.

Dipping the ladyfingers in the coffee for only a second per side is crucial, since a long soak turns them to mush and makes the whole dessert collapse.
