Chocolate Mousse

Classic chocolate mousse is impossibly light yet deeply rich, melting on the tongue. It looks like a restaurant dessert but uses just a few ingredients. Chilled in pretty glasses, it is the perfect make-ahead finish to any meal.

Ingredients

  • 150 g dark chocolate
  • 3 eggs, separated
  • 150 ml heavy cream
  • 2 tbsp sugar
  • 1 tsp vanilla

Instructions

  1. Melt the chocolate gently and let it cool to just warm.
  2. Whip the cream to soft peaks and set aside.
  3. Whip the egg whites with the sugar to stiff glossy peaks.
  4. Stir the egg yolks and vanilla into the cooled chocolate.
  5. Fold in the whipped cream gently, then fold in the egg whites in two additions.
  6. Spoon into glasses.
  7. Chill at least 2 hours until set, then serve.

💡 Chef's tip

Make sure the melted chocolate has cooled to just warm before folding, as hot chocolate would deflate the whipped cream and whites on contact.

Folding the whipped cream and egg whites into the chocolate gently, in stages, is what keeps the mousse airy, since stirring hard knocks out the air and makes it dense.
