Oven Roasted Sweet Potatoes

Oven Roasted Sweet Potatoes are tender, caramelized cubes of sweet potato roasted until the edges turn crisp and golden while the insides stay soft and fluffy. The natural sugars deepen in the heat, giving them a rich, slightly smoky sweetness that pairs with almost any meal. Ingredients

  • 3 sweet potatoes
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp paprika
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 220C (425F) and line a large baking sheet with parchment paper for easy cleanup and better browning.
  2. Peel about 1 kilogram (2 pounds) of sweet potatoes and cut them into even cubes of about 2 centimetres (three quarters of an inch) so they roast at the same rate.
  3. Toss the cubes in a bowl with two to three tablespoons of olive oil, salt, pepper, and a pinch of smoked paprika or cinnamon, making sure every piece is evenly coated.
  4. Spread the potatoes out in a single layer on the baking sheet with space between the pieces so hot air can circulate and crisp the edges.
  5. Roast for 20 minutes, then remove the pan and flip the cubes with a spatula so they brown evenly on all sides.
  6. Return to the oven and roast for another 15 to 20 minutes until the edges are deeply caramelized and a fork slides easily into the centers.
  7. Serve immediately while hot and crisp, garnished with chopped fresh parsley or a sprinkle of flaky salt for extra flavor.

💡 Chef's tip

Spread the cubes in a single layer with space between them and avoid overcrowding the pan, because crowding traps steam and makes the potatoes soft instead of crisp and caramelized.

Tossing the cubes with a little cornstarch along with the oil draws out surface moisture and crisps the edges far more than oil alone.
