Oven Roasted Sweet Potatoes

Ingredients
- 3 sweet potatoes
- 2 tbsp olive oil
- 1 tbsp cornstarch
- 1 tsp paprika
- 1/2 tsp salt
Instructions
- Heat oven to 220C (425F).
- Cube the sweet potatoes and toss with oil, cornstarch and spices.
- Spread out on a tray with space between.
- Roast 25-30 minutes, flipping once, until crisp.
💡 Chef's tip
Give them space on the tray and flip once halfway - crowding steams them soft instead of roasting them crisp.
Tossing the cubes with a little cornstarch along with the oil draws out surface moisture and crisps the edges far more than oil alone.
