Ingredients
- 1 kg ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 egg
- 1 onion, diced
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
Instructions
- Preheat the oven to 190C (375F) and soak the breadcrumbs in the milk.
- Mix the beef, soaked breadcrumbs, egg, onion, Worcestershire, salt, and pepper until just combined.
- Shape into a loaf on a lined baking sheet.
- Stir the ketchup and brown sugar into a glaze and spread half over the loaf.
- Bake for 40 minutes, then brush with the rest of the glaze.
- Bake 15 to 20 minutes more until it reaches 70C (160F), then rest 10 minutes and slice.

Bake the loaf free-form on a lined sheet rather than packed in a pan; this lets the surface brown and the fat drain instead of stewing the loaf.
