Ingredients
- 1 kg russet potatoes, cubed
- 150 g bacon, chopped
- 1 onion, diced
- 4 cups chicken broth
- 1.5 cups milk
- 1.5 cups shredded cheddar
- 3 tbsp flour

Instructions
- Cook the bacon until crisp, then set aside, leaving a little fat in the pot.
- Saute the onion, then stir in the flour and cook for 1 minute.
- Add the potatoes and broth and simmer until the potatoes are tender, about 20 minutes.
- Mash part of the soup for a thick, chunky texture, then stir in the milk.
- Take off the heat and stir in the cheddar until melted, then season.
- Serve topped with bacon, more cheese, and green onions.

Add the cheese off the heat and stir until melted; boiling cheese soup can make it grainy and cause it to separate.
