Loaded Baked Potato Soup

Loaded baked potato soup is thick, creamy, and topped with all the classic baked potato fixings: bacon, cheese, and green onions. It is the ultimate cozy comfort food in a bowl. Rich and hearty, it makes a satisfying dinner the whole family will ask for again.

Ingredients

  • 1 kg russet potatoes, cubed
  • 150 g bacon, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 1.5 cups milk
  • 1.5 cups shredded cheddar
  • 3 tbsp flour
  • to garnish green onions

Instructions

  1. Cook the bacon until crisp, then set aside, leaving a little fat in the pot.
  2. Saute the onion, then stir in the flour and cook for 1 minute.
  3. Add the potatoes and broth and simmer until the potatoes are tender, about 20 minutes.
  4. Mash part of the soup for a thick, chunky texture, then stir in the milk.
  5. Take off the heat and stir in the cheddar until melted, then season.
  6. Serve topped with bacon, more cheese, and green onions.

💡 Chef's tip

Add the cheese off the heat and stir until melted; boiling cheese soup can make it grainy and cause it to separate.

Reserving some of the cooked potato and mashing only part of the soup is the trick to a thick base with tender chunks, giving body without needing excessive cream.
