Ingredients
- 1 tsp matcha powder
- 2 tbsp warm water
- 250 ml milk
- 1 tsp honey
- 1 cup ice
Instructions
- Sift 1 to 2 teaspoons of matcha powder into a small bowl or cup using a fine mesh strainer to remove any lumps, which is the secret to a smooth latte.
- Add about 60ml of warm water that is around 80C (175F) rather than boiling, since water that is too hot makes matcha taste bitter.
- Whisk vigorously in a zigzag motion with a bamboo whisk or small electric frother for about 20 to 30 seconds until the matcha is fully dissolved and a fine layer of foam forms on top.
- Fill a tall glass with ice cubes and pour in about 200ml of cold milk of your choice, sweetening with a little honey or simple syrup now if you prefer.
- Pour the whisked matcha slowly over the milk and ice so it cascades down in green ribbons for a pretty layered look.
- Stir well just before drinking to combine the matcha evenly throughout the milk.
💡 Chef's tip
Always whisk the matcha with a small amount of warm water first rather than pouring it straight into cold milk, because the warm water dissolves the powder and prevents clumps that cold liquid cannot break up.
Whisking the matcha with a little warm water first (not cold milk) dissolves the powder smoothly, avoiding the clumps that ruin a cold-mixed matcha.
