Homemade Granola

Crunchy, golden homemade granola with clusters of toasted oats, nuts, and seeds beats any store-bought box and costs a fraction. It fills the house with a wonderful toasty smell as it bakes. Keep a jar on hand for breakfast over yogurt or a quick snack.

Ingredients

  • 300 g rolled oats
  • 150 g mixed nuts and seeds
  • 80 ml honey or maple syrup
  • 60 ml coconut oil
  • 1 tsp cinnamon

Instructions

  1. Heat the oven to 160C (320F) and line a tray.
  2. Mix the oats, nuts, and seeds in a large bowl.
  3. Warm the honey and coconut oil until pourable, then toss through the oats with the cinnamon and a pinch of salt.
  4. Spread the mixture onto the tray and press it flat.
  5. Bake 25 to 30 minutes, rotating the tray once, until lightly golden.
  6. Let it cool completely on the tray without stirring so clusters form.
  7. Break into chunks, stir in any dried fruit, and store in an airtight jar.

💡 Chef's tip

Pull it from the oven when it is just lightly golden, because granola crisps and darkens further as it cools and burns easily at the end.

Pressing the granola flat on the tray and leaving it undisturbed until it cools is the secret to big crunchy clusters, since stirring while warm breaks them apart.
