Baked Banana Oatmeal

Baked banana oatmeal is a warm, wholesome breakfast bake where rolled oats soak up sweet mashed banana, milk, and a hint of cinnamon. As it bakes it sets into a soft, sliceable dish with caramelized banana flavor and a comforting aroma. It is great for feeding a family at once and reheats beautifully through the week.

Ingredients

  • 250 g rolled oats
  • 2 ripe bananas
  • 400 ml milk
  • 1 egg
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 190C (375F) and lightly grease a baking dish so the oatmeal releases cleanly.
  2. Mash the ripe bananas in a large bowl until mostly smooth, leaving a few small chunks for texture.
  3. Whisk in the milk, eggs, vanilla, cinnamon, and a little maple syrup or sugar until the mixture is well combined.
  4. Stir in the rolled oats and baking powder until everything is evenly moistened, then let the bowl sit for 5 minutes so the oats begin to absorb the liquid.
  5. Pour the mixture into the prepared dish, spreading it evenly, and arrange a few banana slices on top if you like.
  6. Bake for about 30 to 35 minutes until the center is set and the top is golden, then test by pressing gently and looking for it to spring back.
  7. Let it cool for 10 minutes so it firms up enough to slice, then serve warm with a splash of milk or a drizzle of syrup.

💡 Chef's tip

Use very ripe bananas with plenty of brown spots, because they are far sweeter and softer, letting you cut back on added sugar while boosting flavor.

Using very ripe, spotty bananas means you need no added sugar; the riper the banana, the sweeter and more custardy the bake.
