Ingredients

  • 1 cup Cherry tomatoes
  • 1/4 cup All-purpose flour
  • 1 large Egg
  • 1/2 cup Breadcrumbs (panko or regular)
  • 2 tablespoons Grated Parmesan cheese (optional)
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
  • as needed Olive oil spray

Instructions

  1. Wash and pat dry the cherry tomatoes.
  2. Set up a dredging station with three shallow bowls: one with flour, one with a beaten egg, and one with breadcrumbs mixed with Parmesan cheese (if using), salt, and pepper.
  3. Dip each tomato into the flour, shaking off excess, then into the egg, letting excess drip off, and finally coat thoroughly with the breadcrumb mixture.
  4. Arrange the coated tomatoes in a single layer in your air fryer basket, ensuring they don't overlap.
  5. Lightly spray the tomatoes with olive oil.
  6. Air fry at 200C (400F) for 8-10 minutes, or until golden brown and crispy, shaking the basket halfway through.
  7. Let cool slightly before serving to avoid burns.

💡 Chef's tip

Ensure the tomato pieces are relatively uniform in size for even cooking and crisping.
