Churros

Ingredients
- 1 cup water
- 3 tbsp butter
- 1 cup flour
- 1 egg
- 1/2 cup sugar
- 1 tbsp cinnamon
- for frying oil
Instructions
- Bring the water and butter to a boil, then stir in the flour until a dough forms.
- Let the dough cool slightly, then beat in the egg until smooth.
- Transfer to a piping bag fitted with a star tip.
- Heat the oil to 180C (350F) and pipe strips of dough directly into the oil, cutting with scissors.
- Fry until golden and crisp, about 2 to 3 minutes, then drain.
- Roll the warm churros in cinnamon sugar and serve with chocolate sauce.
💡 Chef's tip
Keep the oil at a steady 180C (350F); too cool and the churros absorb oil and go greasy, too hot and they burn before cooking through.
Piping the dough through a star tip creates the signature ridges, which increase the surface area for an extra-crispy exterior and hold the cinnamon sugar.
