Blender Chocolate Avocado Mousse is a rich, decadent dessert that uses ripe avocado to create a remarkably smooth and creamy texture without any heavy cream or eggs. Ingredients

  • 2 ripe avocados
  • 4 tbsp cocoa powder
  • 4 tbsp maple syrup
  • 3 tbsp plant milk
  • 1 tsp vanilla

Instructions

  1. Halve two ripe avocados, remove the pits, and scoop the flesh into a blender, discarding any brown or stringy parts so the mousse stays smooth and clean tasting.
  2. Add about 40 grams (one third cup) of unsweetened cocoa powder, 60 millilitres (one quarter cup) of maple syrup or honey, a splash of plant milk, and a pinch of salt to round out the flavor.
  3. Blend on high speed for about 1 to 2 minutes, stopping to scrape down the sides as needed, until the mixture is completely smooth with no lumps of avocado remaining.
  4. Melt about 30 grams (one ounce) of dark chocolate gently in the microwave in short bursts or over a water bath, then pour it into the blender and blend again briefly so it incorporates and enriches the mousse.
  5. Taste and adjust the sweetness, adding a little more syrup if you prefer it sweeter, and blend once more to combine.
  6. Spoon the mousse into two serving glasses and refrigerate for at least 30 minutes so it firms up and the flavors meld, then serve cold topped with fresh berries or a light dusting of cocoa.
