Easy Banana Bread

Moist, tender banana bread with a craggy golden top - the best way to use up those spotty bananas.

Ingredients

  • 3 very ripe bananas
  • 250 g flour
  • 120 g sugar
  • 2 eggs
  • 80 g melted butter

Instructions

  1. Mash bananas, then mix in sugar, eggs and butter.
  2. Fold in the flour and a teaspoon of baking soda until just combined.
  3. Pour into a lined loaf tin.
  4. Bake at 175C (350F) for 55-60 minutes; cool before slicing.

💡 Chef's tip

Do not overmix once the flour goes in - stir just until combined or the loaf turns dense and tough.

The blacker and softer the bananas, the better: overripe bananas are far sweeter and more aromatic, which is why banana bread is a way to rescue them, not waste good fruit.
