Easy Banana Bread

This easy banana bread is moist, tender, and deeply flavored with sweet ripe bananas and warm vanilla. The simple one bowl batter bakes into a golden loaf with a soft crumb and a beautifully cracked top. Enjoy a thick slice warm with butter for breakfast or as an afternoon snack.

Ingredients

  • 3 very ripe bananas
  • 250 g flour
  • 120 g sugar
  • 2 eggs
  • 80 g melted butter

Instructions

  1. Preheat the oven to 175C (350F) and grease a standard loaf pan or line it with parchment paper.
  2. In a large bowl mash 3 very ripe bananas with a fork until mostly smooth with just a few small lumps.
  3. Stir in a third of a cup of melted butter, three quarters of a cup of sugar, 1 beaten egg, and 1 teaspoon of vanilla until combined.
  4. Sprinkle 1 teaspoon of baking soda and a pinch of salt over the mixture and stir them in evenly.
  5. Add 1 and a half cups of flour and fold gently just until no dry streaks remain, being careful not to overmix or the bread will turn tough.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 50 to 60 minutes until the top is golden and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then turn the loaf out onto a rack and let it cool further before slicing.

💡 Chef's tip

Use the spottiest overripe bananas you can find, because the darker and softer they are the sweeter and more intense the banana flavor will be.

The blacker and softer the bananas, the better: overripe bananas are far sweeter and more aromatic, which is why banana bread is a way to rescue them, not waste good fruit.
