Wonton Soup

Wonton Soup

Delicate pork wontons floating in a clear, savory broth make a soothing and satisfying soup. Folding your own wontons is easier than it looks and deeply rewarding. A bowl of this is pure comfort on a cold day.

Ingredients

  • 24 wonton wrappers
  • 300 g ground pork
  • to taste green onion and ginger
  • 1.2 L chicken broth
  • to season soy and sesame oil

Instructions

  1. Mix the ground pork with chopped green onion, grated ginger, soy sauce, and sesame oil.
  2. Place a small spoon of filling in the center of each wrapper.
  3. Wet the edges, fold, and press out the air to seal tightly.
  4. Bring the broth to a gentle simmer and season it with soy and sesame oil.
  5. Lower in the wontons and simmer gently for 5 minutes until they float and the filling is cooked.
  6. Ladle into bowls with some greens and serve hot.

💡 Chef's tip

Cook the wontons gently in barely simmering broth, since a hard boil tears their delicate wrappers.

Sealing each wonton with a dab of water and pressing out the air prevents them from bursting open in the simmering broth.
