Vegetable Lo Mein

Soft lo mein noodles tossed with crisp vegetables in a savory garlic-soy sauce make a satisfying meatless dinner. It is quick, budget-friendly, and easily loaded with whatever vegetables you have. A weeknight noodle bowl that beats delivery.

Ingredients

  • 300 g lo mein noodles
  • 400 g mixed vegetables
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp each garlic and ginger

Instructions

  1. Boil the noodles until just tender, then drain and set aside.
  2. Heat oil in a wok and stir-fry the garlic and ginger briefly.
  3. Add the harder vegetables first and stir-fry 2 minutes, then the quicker ones.
  4. Mix the soy sauce, sesame oil, and a little sugar into a sauce.
  5. Add the noodles and sauce to the wok.
  6. Toss gently over medium-high heat until everything is coated and hot.
  7. Finish with green onion and serve.

Cook the vegetables hot and fast to keep them crisp-tender and brightly colored rather than limp.

Unlike chow mein, lo mein noodles are meant to stay soft and saucy, so toss them gently rather than crisping them in the pan.
