Thai Peanut Noodles

These quick Thai-inspired noodles are tossed in a creamy, savory peanut sauce with a little heat and lime. They come together in fifteen minutes and work hot or cold. Add any vegetables or protein you like for an easy weeknight bowl.

Ingredients

  • 250 g noodles
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 lime
  • to taste garlic and chili

Instructions

  1. Cook the noodles according to the package, reserving a little cooking water before draining.
  2. Whisk the peanut butter, soy sauce, lime juice, grated garlic, and a touch of honey into a sauce.
  3. Loosen the sauce with a few spoons of the hot noodle water until pourable.
  4. Toss the drained noodles in the sauce until evenly coated.
  5. Add chili to taste for heat.
  6. Top with crushed peanuts, green onion, and extra lime, and serve hot or chilled.

💡 Chef's tip

Make the sauce while the noodles cook so everything comes together at once and the noodles do not stick.

Loosening the peanut sauce with a little of the hot noodle cooking water helps it coat every strand evenly instead of clumping.
