Thai Basil Chicken (Pad Krapow)

Pad krapow is a fiery, fragrant Thai stir-fry of minced chicken and holy basil that is a street-food staple. It is fast, punchy, and traditionally served over rice with a crispy fried egg on top. Few dishes deliver this much flavor in so little time.

Ingredients

  • 400 g ground chicken
  • a large handful Thai basil
  • to taste garlic and chili
  • 2 tbsp each soy and oyster sauce
  • 1 tsp sugar

Instructions

  1. Heat a wok until very hot and add a little oil.
  2. Stir-fry the chopped garlic and chili for a few seconds until fragrant.
  3. Add the ground chicken and stir-fry over high heat, breaking it up, until browned.
  4. Add the soy sauce, oyster sauce, and sugar and toss to coat.
  5. Throw in the basil and toss just until wilted, then take off the heat.
  6. Serve over rice, ideally topped with a crispy fried egg.

💡 Chef's tip

Get the wok very hot before the chicken goes in so it sears and browns rather than steaming in its own juices.

Adding the basil only at the very end and tossing it just until wilted preserves its peppery aroma, which long cooking would destroy.
