Ingredients

  • 500 g shrimp
  • 8 tortillas
  • 2 cups cabbage, shredded
  • 2 lime
  • 1 tbsp chili powder

Instructions

  1. In a bowl, toss peeled and deveined shrimp with chili powder, cumin, smoked paprika, garlic powder, salt, and a squeeze of lime until evenly coated.
  2. Make a quick slaw by tossing shredded cabbage and carrot with a little lime juice and salt, then set it aside so it softens slightly.
  3. Stir together sour cream or yogurt with lime juice and a pinch of salt to make a tangy drizzling sauce, thinning with water if needed.
  4. Heat a large skillet over medium high heat with a drizzle of oil until it shimmers, which signals it is hot enough to sear.
  5. Add the shrimp in a single layer without crowding and cook for about 2 minutes per side until they turn pink and opaque and curl into a loose C shape.
  6. Warm the tortillas in a dry pan or directly over a low flame for about 20 seconds per side until soft and pliable.
  7. Fill each tortilla with shrimp, top with slaw, drizzle with the lime sauce, and finish with avocado slices and fresh cilantro before serving.

Do not crowd the pan when searing the shrimp, because a packed pan traps steam and leaves them rubbery instead of giving them that quick caramelized char.
