Oven Baked Cod

Flaky, mild cod baked with lemon and herbs - a light, healthy dinner that comes together in 20 minutes.

Ingredients

  • 2 cod fillets
  • 1 lemon
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 2 tbsp parsley

Instructions

  1. Heat oven to 200C (400F) and pat the cod dry.
  2. Place on a lined tray; top with oil, garlic and lemon.
  3. Bake 12-15 minutes until it flakes easily.
  4. Scatter parsley and serve.

💡 Chef's tip

Cod is lean and cooks fast - pull it the moment it flakes, as a few extra minutes turn it dry and rubbery.

Patting the cod completely dry before baking lets the surface lightly brown instead of poaching in its own released water, which keeps the texture firm.
