Ingredients

  • 6 chicken thighs
  • 1 lemon, zested and juiced
  • 1.5 tsp black pepper, cracked
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • to taste salt

Instructions

  1. Preheat the oven to 200C (400F).
  2. Mix the lemon zest, lemon juice, black pepper, garlic powder, oil, and salt.
  3. Toss the chicken thighs in the seasoning to coat well.
  4. Arrange them in a baking dish in a single layer.
  5. Bake for 30 to 35 minutes until the chicken reaches 75C (165F).
  6. Broil for 1 to 2 minutes for golden edges, then rest and serve.

Bake at a high heat and finish under the broiler for a minute to get golden, slightly crisp edges on the chicken.

Adding fresh lemon zest along with the juice gives a deeper, more aromatic citrus flavor than juice alone, since the zest holds the fragrant oils.
