Chicken Souvlaki

Ingredients
- 700 g chicken breast, cubed
- 3 tbsp olive oil
- 1 lemon, juiced
- 4 cloves garlic, minced
- 1 tbsp dried oregano

Instructions
- Whisk the olive oil, lemon juice, garlic, oregano, salt, and pepper into a marinade.
- Toss the chicken cubes in the marinade and chill for 1 to 2 hours.
- Thread the chicken onto skewers.
- Preheat the grill to medium-high, about 220C (425F).
- Grill the skewers for 10 to 12 minutes, turning, until charred and cooked through.
- Rest for a few minutes, then serve with pita and tzatziki.
💡 Chef's tip
Do not marinate longer than a few hours; too much lemon acid eventually breaks the chicken down and turns the texture mushy.
The lemon and olive oil marinade does double duty: the acid tenderizes the chicken while the oil carries the garlic and oregano deep into the meat as it sits.
