Ingredients
- 4 cups cooked chicken, shredded
- 10 corn tortillas, cut
- 1 can diced tomatoes with green chiles
- 2 cups cream sauce
- 1 each onion and bell pepper, diced
- 2.5 cups shredded cheese
- 1 tbsp each chili powder and cumin
Instructions
- Saute the onion and bell pepper until soft.
- Stir in the chicken, tomatoes with chiles, cream sauce, and spices.
- Layer half the tortilla pieces in a baking dish.
- Top with half the chicken mixture and half the cheese, then repeat the layers.
- Cover and bake at 190C (375F) for 30 minutes.
- Uncover and bake 10 minutes more until bubbly, then rest and serve.

Use rotisserie chicken to make assembly fast, and let the casserole rest before serving so the layers set.
