King Ranch Casserole

King Ranch casserole is a Tex-Mex classic layering chicken, tortillas, and a creamy, spiced sauce with plenty of cheese. Each bite is savory, cheesy, and packed with mild chili flavor. It is a hearty, crowd-pleasing bake perfect for feeding a group.

Ingredients

  • 4 cups cooked chicken, shredded
  • 10 corn tortillas, cut
  • 1 can diced tomatoes with green chiles
  • 2 cups cream sauce
  • 1 each onion and bell pepper, diced
  • 2.5 cups shredded cheese
  • 1 tbsp each chili powder and cumin

Instructions

  1. Saute the onion and bell pepper until soft.
  2. Stir in the chicken, tomatoes with chiles, cream sauce, and spices.
  3. Layer half the tortilla pieces in a baking dish.
  4. Top with half the chicken mixture and half the cheese, then repeat the layers.
  5. Cover and bake at 190C (375F) for 30 minutes.
  6. Uncover and bake 10 minutes more until bubbly, then rest and serve.

💡 Chef's tip

Use rotisserie chicken to make assembly fast, and let the casserole rest before serving so the layers set.

Layering the tortillas between the filling like a lasagna lets them soften and soak up the sauce, holding the casserole together in sliceable layers.
