Grilled Chicken Skewers
Grilled chicken skewers are tender chunks of marinated chicken threaded onto sticks and charred over a hot grill until smoky and juicy. The marinade soaks deep into the meat, giving each piece a savory, slightly caramelized crust while keeping the inside moist. They are perfect party food, easy to share and to eat straight off the skewer.

Ingredients
- 700 g chicken breast, cubed
- 150 g yogurt
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp paprika
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and your chosen herbs to form a fragrant marinade.
- Cut the chicken into even bite-sized cubes of about 2.5 centimeters so they cook at the same rate, then toss them in the marinade and refrigerate for at least 30 minutes or up to 4 hours.
- Thread the chicken pieces snugly onto the soaked skewers, leaving a small gap between pieces so the heat can reach all sides.
- Preheat the grill to medium-high, around 200C (400F), and lightly oil the grates to keep the chicken from sticking.
- Grill the skewers for about 10 to 12 minutes total, turning every 3 minutes, until the chicken is golden with char marks and the juices run clear.
- Check that the thickest piece reaches an internal temperature of 74C (165F), then rest the skewers for 5 minutes so the juices settle before serving.
💡 Chef's tip
Soak wooden skewers in water for at least 30 minutes before grilling so they do not catch fire and char through while the chicken cooks.
A yogurt-based marinade does more than flavor: its mild acidity and enzymes tenderize the chicken so it stays juicy even over high grill heat.
