Ingredients
- 500 g large shrimp
- 2 tbsp olive oil
- 3 cloves garlic
- 1 lemon
- 1 tsp paprika
Instructions
- In a bowl, whisk together olive oil, minced garlic, lemon juice, chopped parsley, salt, pepper, and a pinch of red pepper flakes to make a bright marinade.
- Add about 700 grams (1.5 pounds) of peeled and deveined large shrimp to the marinade, toss to coat, and let sit for 15 to 30 minutes, but no longer because the acid can start to toughen the shrimp.
- If using wooden skewers, soak them in water for at least 30 minutes, then thread four to five shrimp onto each, piercing through both ends so they hold flat.
- Preheat the grill to medium-high, around 200C (400F), and lightly oil the grates so the shrimp do not stick.
- Grill the skewers for about 2 to 3 minutes per side, turning once, until the shrimp turn pink and opaque with light char marks, being careful not to overcook them.
- Remove the skewers from the grill as soon as the shrimp are firm and opaque, since they continue cooking for a moment off the heat.
- Arrange on a platter, squeeze fresh lemon over the top, and serve right away with a cool dipping sauce such as garlic aioli or cocktail sauce.
💡 Chef's tip
Soak wooden skewers in water for at least 30 minutes before grilling so they do not burn, and thread the shrimp through both the head and tail end so they lie flat and cook evenly.
Threading shrimp on two parallel skewers instead of one stops them from spinning when you flip, so every shrimp grills evenly on both sides.
