Grilled Shrimp Skewers

Smoky, garlicky grilled shrimp on skewers - a fast, low-carb cookout favorite that is ready in minutes.

Ingredients

  • 500 g large shrimp
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 lemon
  • 1 tsp paprika

Instructions

  1. Toss shrimp with oil, garlic, paprika and lemon zest.
  2. Thread onto pairs of skewers.
  3. Grill over high heat 2 minutes per side until pink.
  4. Squeeze lemon over and serve.

Shrimp cook in 2 minutes a side - have everything ready, because they go from perfect to rubbery fast.

Threading shrimp on two parallel skewers instead of one stops them from spinning when you flip, so every shrimp grills evenly on both sides.
