Garlic Naan

Garlic naan is a soft, pillowy Indian flatbread brushed with garlic butter and fresh cilantro. Made in a skillet at home, it puffs up with charred, bubbly spots just like the restaurant version. It is the perfect companion for scooping up curries and dals.

Ingredients

  • 3 cups flour
  • 3/4 cup plain yogurt
  • 1 tsp active dry yeast
  • 1/2 cup warm water
  • 3 tbsp butter, melted
  • 4 cloves garlic, minced
  • 2 tbsp cilantro, chopped

Instructions

  1. Dissolve the yeast in the warm water and let it foam for 5 minutes.
  2. Mix in the yogurt, flour, and salt to form a soft dough, then knead until smooth.
  3. Cover and let it rise for 1 hour until doubled.
  4. Divide and roll the dough into ovals.
  5. Cook each in a very hot dry skillet for 1 to 2 minutes per side until puffed and charred.
  6. Brush with the garlic butter, sprinkle with cilantro, and serve warm.

Cook the naan in a very hot, dry cast iron skillet; the intense heat creates the signature charred bubbles and keeps the inside soft.

Yogurt in the dough is the key to soft, tender naan, adding moisture and a slight tang while helping it puff and blister on the hot pan.
