Ingredients
- 2 slices bread
- 60 g cheddar cheese
- 1 tbsp mayonnaise
- 1 tsp butter
Instructions
- Choose two slices of sturdy sandwich bread and spread a thin even layer of softened butter or mayonnaise across one side of each slice.
- Place 2 to 3 slices of cheddar or a melting cheese between the bread so the buttered sides face outward.
- Heat a skillet over medium low heat, around 150C (300F), so the cheese has time to melt before the bread burns.
- Lay the sandwich in the pan and cook for 3 to 4 minutes, pressing gently with a spatula, until the underside is deep golden brown.
- Flip carefully and cook the second side another 3 minutes until it is equally golden and the cheese is fully melted and oozing at the edges.
- Transfer to a cutting board, let it rest for 1 minute so the cheese sets slightly, then slice in half on the diagonal and serve warm.
💡 Chef's tip
Use mayonnaise instead of butter on the outside of the bread for an evenly golden crust, since mayonnaise spreads smoothly and browns without burning spots.
Spreading mayonnaise instead of butter on the outside of the bread browns more evenly and crisps harder, because it has a higher smoke point and spreads cold.
